INGREDIENTS:
- ½ cup white Bambara Nuts
- 2-3 cups water for soaking
- 4 cups water for blending
- Sweetener of choice to taste (optional)
INSTRUCTIONS:
- Soak Bambara Nuts in 2-3 cups of water overnight.
- Discard water and rinse Bambara Nuts
- Remove skins as best you can. (Optional)
- Allow Bambara Nuts to dry and roast in a pan for 10 minutes
- Allow to cool. Then add roasted Bambara Nuts and 4 cups of water to blender.
- Blend until smooth.
- Strain the blended mixture using A Nut Milk Bag. A tight-weave cloth is preferable, as twisting the top tightly enables you to continue squeezing out more milk.
- Heat the strained milk in a heavy-bottom pan on low heat. Hold this temperature till you get your desired consistency, stirring frequently to prevent sticking. Cool the milk. Please note that heating up the milk is optional.
- Add sweetener of choice and store.
- Refrigerate up to 4 days.
HOW TO USE HOMEMADE BAMBARA MILK
Homemade Bambara milk is a great alternative for making yogurt. You can also use it for making homemade tofu and dairy replacement in bakes.
